So, What is Barbeque Anyway?

Folks have been confusing barbequing and grilling for quite some time. Sorry folks, but what goes on in your backyard with your gas or charcoal grill is grillin’—and not barbeque. Here’s the difference:

Grilling is high temperature and happens fast (in a matter of minutes); it happens over direct heat.

Real barbeque is low-and-slow using indirect heat. It takes years to perfect and is measured in hours and days, not in minutes like with grilling.

Jimmy G’s uses real hardwood in our smoker. We’re partial to fruitwood because of the sweet, mild flavor it produces.
